Ingredients:
For Marination:
2 whole pomfret fish (cleaned and slit on both sides)
1 tbsp lemon juice
Salt to taste
1/2 tsp turmeric powder
For Tandoori Masala:
1/2 cup thick curd (hung curd preferred)
1 tbsp ginger-garlic paste
1 tbsp Kashmiri red chili powder (for color)
1 tsp red chili powder (for spice)
1/2 tsp cumin powder
1/2 tsp garam masala
1/2 tsp chaat masala
1 tbsp mustard oil (adds a smoky flavor)
Salt to taste
Juice of half a lemon

Instructions:
1. First Marination:
Rub pomfret with salt, lemon juice, and turmeric. Let it rest for 15–20 minutes.
2. Second Marination:
Mix all the tandoori masala ingredients into a smooth paste.
Coat the fish well with this mixture, especially inside the slits.
Marinate for at least 1 hour (overnight in the fridge gives the best flavor).
3. Cooking Methods:
Oven: Preheat to 200°C. Place fish on a greased tray, bake for 15–20 mins, flip once halfway. Broil for last 2-3 minutes for charred effect.
Tandoor: Grill till cooked with a nice smoky char.
Pan-fry: Use a non-stick pan with a bit of oil. Cook each side for 4–5 minutes on medium flame.
4. Serve hot with mint chutney, onion rings, and lemon wedges.
