KADAHI PANEER


 

Kadai Paneer Recipe

Ingredients:

  • Paneer (cottage cheese) – 250g (cubed)
  • Onion – 2 (sliced)
  • Capsicum (bell pepper) – 1 (diced)
  • Tomatoes – 3 (pureed)
  • Ginger-garlic paste – 1 tbsp
  • Green chilies – 2 (slit)
  • Butter/ghee – 2 tbsp
  • Oil – 1 tbsp
  • Kasuri methi – 1 tsp (crushed)
  • Fresh cream – 2 tbsp (optional, for richness)
  • Coriander leaves – 2 tbsp (chopped)
  • Salt – to taste

Spices:

  • Coriander seeds – 1 tbsp (coarsely crushed)
  • Red chili powder – 1 tsp
  • Turmeric powder – 1/4 tsp
  • Garam masala – 1/2 tsp
  • Cumin seeds – 1/2 tsp
  • Kadai masala – 1 tbsp (store-bought or homemade)

Homemade Kadai Masala:

  • 1 tbsp coriander seeds
  • 1/2 tsp cumin seeds
  • 2 dried red chilies
  • 1/2 tsp peppercorns
    👉 Dry roast and coarsely grind.

Instructions:

  1. Prepare the Base:

    • Heat oil and butter in a kadai (wok).
    • Add cumin seeds and crushed coriander seeds.
    • Once they splutter, add onions and sauté until golden.
    • Add ginger-garlic paste and green chilies.
  2. Cook the Masala:

    • Add tomato puree and cook until the oil separates.
    • Add red chili powder, turmeric, and salt.
    • Mix in the kadai masala and cook for 2-3 minutes.
  3. Add Veggies & Paneer:

    • Add capsicum and cook for 2-3 minutes.
    • Add paneer cubes and gently mix.
    • Sprinkle kasuri methi and garam masala.
    • Add cream (optional) for a richer taste.
  4. Simmer & Serve:

    • Let it simmer for 5 minutes on low flame.
    • Garnish with coriander leaves.

Serving Tip:

  • Serve hot with naan, roti, or jeera rice.
  • Enjoy your flavorful kadai paneer!
