🥞 Masala Dosa Recipe

Ingredients

For Dosa Batter:
  • Rice – 2 cups
  • Urad dal (split black gram) – ½ cup
  • Fenugreek seeds (methi) – 1 tsp
  • Salt – to taste
  • Water – as needed
For Masala Filling:
  • Potatoes – 4 (boiled and mashed)
  • Onion – 2 (sliced)
  • Green chilies – 2 (chopped)
  • Ginger – 1 tsp (grated)
  • Mustard seeds – 1 tsp
  • Curry leaves – 8-10
  • Turmeric powder – ½ tsp
  • Red chili powder – ½ tsp (optional)
  • Salt – to taste
  • Oil – 2 tbsp
  • Coriander leaves – 2 tbsp (chopped)

🥣 Instructions

1️⃣ Prepare the Dosa Batter

  1. Soak the Rice and Dal:
    • Wash and soak rice, urad dal, and fenugreek seeds in water for 6-8 hours or overnight.
  2. Grind the Batter:
    • Drain the water and grind them to a smooth batter using little water.
  3. Ferment the Batter:
    • Add salt and keep the batter in a warm place for 8-10 hours to ferment.

2️⃣ Prepare the Masala Filling

  1. Heat Oil:
    • In a pan, heat oil and add mustard seeds. Let them crackle.
  2. Add Aromatics:
    • Add curry leaves, green chilies, and ginger. Sauté for 30 seconds.
  3. Cook the Onion:
    • Add sliced onions and cook until translucent.
  4. Add Spices:
    • Add turmeric powder, red chili powder, and salt. Mix well.
  5. Add Potatoes:
    • Add boiled and mashed potatoes. Mix and cook for 5-7 minutes.
  6. Garnish:
    • Add chopped coriander leaves and mix well. Set aside.

3️⃣ Prepare the Dosa

  1. Heat the Tava:
    • Heat a non-stick or cast-iron tava (griddle) over medium heat.
  2. Spread the Batter:
    • Pour a ladle of batter and spread it evenly in a circular motion to form a thin dosa.
  3. Cook the Dosa:
    • Drizzle some oil around the edges and cook until the bottom turns golden brown.
  4. Add Masala:
    • Place a portion of the potato masala in the center of the dosa.
  5. Fold and Serve:
    • Fold the dosa and serve hot with coconut chutney and sambar.

🍽️ Tips

  • For crispier dosas, spread the batter thinly and cook on medium-high heat.
  • Add a pinch of sugar to the batter for a golden-brown color.
