Mix Vegetable Recipe

Ingredients:

  • 1 cup cauliflower florets
  • 1/2 cup green peas
  • 1/2 cup chopped carrots
  • 1/2 cup French beans (chopped)
  • 1/2 cup diced potatoes
  • 1 medium onion (finely chopped)
  • 1 medium tomato (finely chopped)
  • 1 green chili (chopped)
  • 1 tbsp ginger-garlic paste
  • 2 tbsp oil or ghee
  • 1/2 tsp cumin seeds
  • 1/2 tsp turmeric powder
  • 1 tsp coriander powder

  • 1/2 tsp red chili powder
  • 1/2 tsp garam masala
  • Salt to taste
  • Fresh coriander leaves (chopped) for garnish

Instructions:

  1. Preparation:

    • Wash and chop all the vegetables into small, even-sized pieces.
  2. Cooking:

    • Heat oil in a pan on medium flame.
    • Add cumin seeds and let them splutter.
    • Add chopped onion and sauté until golden brown.
    • Add ginger-garlic paste and green chili. Cook for 1-2 minutes.
    • Add tomatoes and cook until soft.
    • Add turmeric, coriander powder, red chili powder, and salt. Mix well.
  3. Add Vegetables:

    • Add potatoes and carrots first. Cook for 5 minutes.
    • Then add cauliflower, beans, and peas. Mix well.
    • Cover and cook on low flame for 15-20 minutes, stirring occasionally.
  4. Finishing Touch:

    • Sprinkle garam masala and mix.
    • Garnish with fresh coriander leaves.

Serve hot with roti, paratha, or rice. Enjoy your flavorful mix vegetable dish!
