Tandoori chicken is a popular Indian
dish made by marinating chicken in spiced yogurt and then roasting it to perfection. Here’s how you can make it at home.
Ingredients
For Marination:
- 500g chicken (with bone, preferably leg & thigh pieces)
- ½ cup thick yogurt (curd)
- 1 tbsp lemon juice
- 1 tbsp ginger-garlic paste
- 1 tsp salt (adjust to taste)
- 1½ tsp Kashmiri red chili powder (for color)
- 1 tsp garam masala
- 1 tsp cumin powder
- ½ tsp turmeric powder
- 1 tsp coriander powder
- ½ tsp black pepper powder
- 1 tbsp mustard oil (or any oil)
- ½ tsp chaat masala (optional)
- A pinch of red food color (optional)
For Cooking:
- 1 tbsp butter or ghee
- Lemon wedges & onion rings (for garnish)
- Fresh coriander leaves (for garnish)

Prepare the Chicken:
- Make deep cuts on the chicken pieces so the marinade can penetrate well.

Marination:
- In a bowl, mix yogurt, lemon juice, ginger-garlic paste, salt, spices, mustard oil, and food color (if using).
- Coat the chicken well with the marinade, cover, and refrigerate for at least 6 hours (preferably overnight).

Cooking Methods:
- Oven: Preheat to 220°C (425°F). Place chicken on a rack and bake for 25-30 minutes, turning once in between. Broil for an extra 5 minutes for a charred effect.
- Stovetop: Heat a grill pan, grease with butter, and cook on medium heat for 10-12 minutes per side until charred and cooked through.
- Tandoor/BBQ: Cook over hot charcoal for an authentic smoky flavor, turning occasionally.

- Brush with melted butter or ghee for extra flavor.
- Sprinkle chaat masala, garnish with lemon wedges and onion rings.

Serve Hot with mint chutney and naan or rumali roti.
