Ingredients:

  • 500g chicken (bone-in or boneless, cut into pieces)
  • 2 tbsp oil or ghee
  • 1 large onion, finely chopped
  • 2 tomatoes, pureed or finely chopped
  • 1 tbsp ginger-garlic paste
  • 1/2 cup plain yogurt (optional for richness)
  • 1 tsp cumin seeds
  • 1-2 bay leaves (optional)
  • 1 tsp turmeric powder
  • 1 tsp red chili powder (adjust to taste)
  • 1.5 tsp coriander powder
  • 1 tsp garam masala
  • Salt to taste
  • Fresh coriander leaves (for garnish)
  • Water as needed

Instructions:

  1. Heat oil in a pan. Add cumin seeds and bay leaves. Let them splutter.
  2. Add chopped onions and sauté till golden brown.
  3. Add ginger-garlic paste, cook for 1-2 minutes until raw smell disappears.
  4. Add pureed tomatoes. Cook until the oil separates (5–7 minutes).
  5. Add turmeric, chili powder, coriander powder, and salt. Mix well.
  6. Add chicken pieces, coat well with the masala. Cook on medium-high for 5–7 minutes.
  7. Lower the heat, add yogurt (if using), and cook for 5 minutes.
  8. Add water to make gravy as per your preference. Cover and simmer for 15–20 minutes till chicken is cooked.
  9. Add garam masala, stir well, and cook for 2 more minutes.
  10. Garnish with fresh coriander leaves.

Serve hot with rice, roti, or naan.
