Ingredients:
- 500g chicken (bone-in or boneless, cut into pieces)
- 2 tbsp oil or ghee
- 1 large onion, finely chopped
- 2 tomatoes, pureed or finely chopped
- 1 tbsp ginger-garlic paste
- 1/2 cup plain yogurt (optional for richness)
- 1 tsp cumin seeds
- 1-2 bay leaves (optional)
- 1 tsp turmeric powder
- 1 tsp red chili powder (adjust to taste)
- 1.5 tsp coriander powder
- 1 tsp garam masala
- Salt to taste
- Fresh coriander leaves (for garnish)
- Water as needed
Instructions:
- Heat oil in a pan. Add cumin seeds and bay leaves. Let them splutter.
- Add chopped onions and sauté till golden brown.
- Add ginger-garlic paste, cook for 1-2 minutes until raw smell disappears.
- Add pureed tomatoes. Cook until the oil separates (5–7 minutes).
- Add turmeric, chili powder, coriander powder, and salt. Mix well.
- Add chicken pieces, coat well with the masala. Cook on medium-high for 5–7 minutes.
- Lower the heat, add yogurt (if using), and cook for 5 minutes.
- Add water to make gravy as per your preference. Cover and simmer for 15–20 minutes till chicken is cooked.
- Add garam masala, stir well, and cook for 2 more minutes.
- Garnish with fresh coriander leaves.
Serve hot with rice, roti, or naan.
